Canning Pickled Beets – Canning What You Grow

Pickled Beets
Recipe (from Ball Blue Book)
3 quarts beets
2 cups sugar
2 sticks cinnamon
1 tablespoon allspice
1 1/2 teaspoon salt
3 1/2 cups vinegar
1 1/2 cups water

Cook beets, peel. Combine all ingredients except beets in large saucepan, reduce to simmer for 15 min. Pack beets into hot jars, ladle liquid over beets, leaving 1/4 inch headspace. Process 30 min in hot water bath canner.
