Joey, I have heard that potatoes will grow up the stems, rather than down into the dirt, hence the need for hilling. Is this true? I’ve never had great success growing them, so I really don’t know.
Potatoes are like tomatoes some are determinate and indeterminate so biased on the the type of potato you have
